环氧乙烷又称氧化乙烯，是一种在低温下为无色透明液体，常温下为无色带有刺激性的气体。其具有较强的扩散、穿透性能和灭菌能力，常温下对细菌、真菌、芽孢和立克次氏体等各种微生物有杀灭作用。它是继甲醛后出现的第二代化学消毒剂，至今仍是*好的冷消毒剂之一，可应用于某些食品和药物的灭菌，也可用于对热敏感的药物的灭菌。食品中的环氧乙烷一部分来源于食品包装材料，一部分来源于使用了被环氧乙烷污染的原材料，或将环氧乙烷作为植保剂和熏蒸剂使用。2-氯乙醇为环氧乙烷灭菌过程中衍生的有机物质，事实上已有越来越多的资料表明2-氯乙醇的毒性不亚于环氧乙烷，欧盟规定环氧乙烷的含量是以环氧乙烷和2-氯乙醇之和计。2020年9月至2023年9月，仅仅欧洲就发生了180起食品中检测出环氧乙烷及2-氯乙醇超标的食品安全事故。过量的环氧乙烷对人体毒害较大，不仅会引起急性中毒，还会致过敏、致突变和致癌变。

Ethylene oxide, also known as epoxyethane, is a colorless and transparent liquid at low temperatures, and a colorless and irritating gas at room temperature. It has strong diffusion, penetration, and sterilization capabilities, and has a killing effect on various microorganisms such as bacteria, fungi, spores, rickettsia, and viruses at room temperature. It is the second generation of chemical disinfectants after formaldehyde and is still one of the best cold disinfectants. It can be used for sterilization of certain foods and drugs, as well as for sterilization of heat sensitive drugs. Part of the ethylene oxide in food comes from food packaging materials, and another part comes from the use of raw materials contaminated with ethylene oxide, or the use of ethylene oxide as a plant protection agent and fumigant. 2-chloroethanol is an organic substance derived from the sterilization process of ethylene oxide. In fact, more and more data shows that the toxicity of 2-chloroethanol is no less than that of ethylene oxide. The European Union stipulates that the content of ethylene oxide is calculated based on the sum of ethylene oxide and 2-chloroethanol. From September 2020 to September 2023, there were 180 food safety incidents in Europe alone where excessive levels of ethylene oxide and 2-chloroethanol were detected in food. Excessive ethylene oxide is highly toxic to the human body, causing not only acute poisoning but also allergies, mutations, and carcinogenesis.  
This document describes the gas chromatography-mass spectrometry method for determining the total amount of ethylene oxide and 2-chloroethanol in food.
